A few years back my sister saw some cute little cupcakes decorated like hot cocoa mugs and showed them to me. I had fun making them for the young women of my ward then. I had totally forgotten about them until I was looking back at my old blog recently and saw them again! So I decided to make them for the young women that I get to serve with again! Plus then I could take some yummy looking pictures of them to remember again next year!
Chocolate Yum Yum Cake (yes, that's what it's called)
1 cup butter
4 heaping TB. cocoa
1 cup water
2 cups flour
2 cups sugar
1 tsp cinnamon
1 tsp baking soda
1 tsp vanilla
1/2 cup butter milk (or 1/2 cup milk and a splash of vinegar)
Melt the butter, cocoa and water in a saucepan, add it to the flour, sugar, cinnamon and baking soda. Blend into the mixture the eggs, vanilla and milk. Once it's well combined scoop it into cupcake liners. Bake for about 20 - 25 minutes at 350 degrees. Once a toothpick or knife comes out clean you know they're done. Let the cupcakes cool, then top with some super yummy frosting!
1 cup butter (softened)
1/2 cup coca
5 cups powdered sugar
1 tsp vanilla
3-4 TB milk
Blend together the butter and cocoa, then add in the sugar and liquids, add more or less milk as needed. It's seriously so yummy! I normally use 4 tablespoons milk, and I normally end up adding a little extra vanilla because I never measure it with a spoon. This is a super simple recipe and if you add too much milk just add a little extra sugar! Lastly, to finish off "topping" the cupcakes, you'll need:
a packet of swiss miss or another brand of hot cocoa
I used some kitchen shears and cut up the mini marshmallows into fours, if you had the little jet putted dehydrated marshmallows that would work perfectly! But I didn't have time to run to the store the day I made these. Break the pretzels in half so you only have the rounded side, then you can press it into the side of the cupcake to look like a handle. I made 24 cupcakes, but probably used 40 pretzels since I kept accidentally breaking them, so have a bag on hand in case you break too many of them! Okay, so use the pretzel as the cocoa mug handle, put the marshmallows on top of the frosting and then shake a little hot cocoa mix on top to give it a little bit of the cocoa taste and the look of instant cocoa! It makes it look more fun!
s you can see in the last picture, my kiddos LOVED these cupcakes! My 4 year old devoured hers, pretty sure she was covered in chocolate by the time she was done. Cute girl!
